Do You Need Quick & Healthy Snack or Meal Options?

One of the hardest things many people find when they embark on a new health & fitness lifestyle is keeping on track when life starts to get busy. Work, training, family, kids, friends … seriously, who has time to keep up with healthy meals and snacks with so much other stuff going on in life!

If there is one important tip that I give my clients to help them stay on track with their healthy eating is that they need to be organised and plan. Plan your menu and snacks for the week. Get your grocery shopping done on Sunday so that you are ready to start the week with everything you need to make your healthy, balanced meals.  While you are at it on Sunday, why not prep some meals or snacks that you can just grab and go? That way you don’t have to think, nor do you have to grab a “healthy” takeaway option!

This yummy frittata recipe is one that I make up for the family regularly. The kids have it for snacks in the afternoon before whatever training they are off to, and I have it as a snack or lunch with a salad if there’s any left.

Zucchini, Carrot & Bacon Frittata

What you need …

6 eggsZucchini Carrot & Bacon Frittata

150g bacon, chopped

1/2 zucchini grated

1/2 carrot grated

1/2 capsicum, chopped finely

1/2 onion, chopped finely

1/2 cup of grated cheese of your choice

1/4 – 1/2 teaspoon baking powder

1 tablespoon Dijon Mustard ( or whatever you have in the fridge )

 

What you do …

Saute bacon, onion and capsicum and set aside to cool.

Whisk eggs in a large bowl and add zucchini, carrot, mustard, cheese and baking powder. Add sauteed mixture to egg mixture and combine gently.

Pour mixture into greased baking dish and bake in moderate oven for 30 – 35 minutes or until it is cooked and golden brown on top.

Wait until it cools a little before you eat it, because it will be hot!
