Again, I’m on the search for yummy treats that the kids can have to stave off their constant hunger!  I turn to Pinterest and try not to get lost in the thousands of delicious recipes on there!  Are you on Pinterest? It’s quite the procrastination black hole isn’t it!!

Anyway, I had thoughts of a banana and coconut cake, not because this is what I felt like .. because I had too many bananas that were getting to the over ripe point.  Master 9 decided last week that he is preferring green apples rather than bananas at the moment … if only he told me before I bought the supply for the week …

Here is the recipe that I found, it’s quite easy and it’s not over poweringly banana .. it’s also a bit lighter than banana bread.  I made it up according to the original recipe, however I think I would like to try it with wholemeal flour to give it a different taste / texture .. whether it makes it “healthier” with the wholemeal is probably a bone of contention, but honestly I don’t care.  I know that I have made it and there aren’t too many nasties in it, it tastes yum and the kids like it .. winning!  A link to the original recipe is below ..

Banana & Coconut Cake

What you need …                                                                                                                        Ascent Health & Fitness

300ml milk ( yes, I used low fat )

1/2 cup desiccated coconut

1 3/4 cup all purpose flour ( plain flour )

2 tsp baking powder

1/2 tsp baking soda

3 large ripe bananas

1/2 cup butter

1/2 cup sugar ( I used raw sugar )

1 large egg

1 tsp vanilla

What you do …

1.  Combine milk and coconut and let stand at room temp for 30 minutes.

2.  Preheat oven to 180C.  Grease / line 8 inch x 8 inch baking pan.

3.  In a bowl, sift together flour, baking powder and baking soda. Make sure they are well combined.

4.  Peel and mash bananas in another bowl.

5.  Cream butter and sugar until light and fluffy. Beat in egg, then add vanilla

6.  Add half coconut mixture, half flour and half bananas to the creamed butter and sugar.  Combine on low for 30 seconds.  Then add remaining coconut, banana and flour.  Continue beating until batter is smooth and combined.

7.  Pour batter into baking pan and bake for around an hour or until skewer comes out clean.

8.  Do the usual, cool in the pan for 10 minutes then remove and cool on wire rack.

The original recipe calls for cream cheese frosting.  Now while I LOVE cream cheese frosting I decided against including it .. I was lazy / didn’t want the extra calories .. circle your choice.

Instead I drizzled maple syrup over the top while it was still in the pan, then sprinkled some flaked coconut over the top just to fancy it up, you know …
