Salmon & Goat’s Cheese Salad

This recipe is one of my favourites for lunch.  And seeing as it is still quite warm a salad isn’t out of the question!

Ingredients

100g – 120g salmon ( baked, tinned, smoked )

Spinach ( or greens of your choice )Ascent Health & Fitness
Cherry Tomatoes
Goats cheese approx 25g ( I use Meredith Dairy marinated )
Onions / Shallots
Half small Sweet Potato ( steamed, baked )

 

Throw it all together and enjoy!I use left over baked salmon which makes this so quick and easy but a little bit gourmet at the same time! You can of course, use tinned or smoked, your personal preference.

The salad inclusions again are your personal
preference depending on your tastes and what’s
in your fridge, however I do try to keep it simple as
the salmon and goats cheese are quite strong flavours so may overpower everything else.

You can use a simple dressing of olive oil if you like but it’s not really necessary .. sometimes I will use a teaspoon of the oil the cheese is marinated in which adds a nice flavour.

A simple but super tasty salad to throw together to make sure you have a healthy option for lunch .. or dinner.
