As you know I’m always after something different for a snack or little “healthy-ish” treat.  So after consulting my trusty recipe book ( it’s really Pinterest … I love it for finding new and different recipes ) I found this recipe for Home Made Protein Bars.  Don’t get me wrong, they are not a low calorie or low fat option, but they actually taste pretty good!

My taste testers this week were my clients! I whipped up these little goodies and some of my clients had them as a post workout treat .. I forgot to give them to some clients, this was not intentional, this was just because I forgot! If there are any left I will save them for you so don’t worry!

They didn’t take too long to make and I had pretty much everything in my pantry so I thought I would share the recipe.  I have also included a link to the original recipe.  The original recipe has a chocolate topping, not chocolate chocolate but a homemade version.  After I taste tested the mixture ( as you do ) I personally felt it was sweet enough so didn’t put any chocolate on top, however if I was going to add it, I would just melt some chocolate down and drizzle it across the top.

Home Made Protein Bars

What you Need

2 cups nuts or seeds ( I used whole natural almonds )Ascent Health & Fitness
½ cup flax meal ( I was too lazy to grind them up before so I just threw them into the food processor)
½ cup shredded coconut
½ cup seed or nut butter ( I used peanut butter )
pinch of salt
½ cup coconut oil
2 tbsp honey
2 teaspoons vanilla extract

What to Do 

I seriously just put all the ingredients into the food processor and blitzed it up until it was as paste-y as I could get it.  The original recipe suggests grinding the flax seeds which would probably make it a little less crunchy ( and they won’t get stuck in your teeth ) but I quite like the crunch!

Spread and press into a baking tin.  I would recommend slicing it into pieces before refrigerating. I didn’t do this and a few pieces crumbled.  It would just make it look a bit prettier ? .

Refrigerate until hardened, then keep in fridge.

Enjoy as a little treat or a quick grab and go snack!
