Who doesn’t, at some time or other, enjoy a piece of chocolate cake?  I’m not a huge cake fan in general but sometimes it’s nice for a change … and I needed to bake treats for the kids during the week!

When my sister mentioned she had whipped this cake up for dessert and it was a bit yum, I thought it might be worth a try!

The original recipe is cited as a Paleo Chocolate Cake, but as you know I’m not really one for paleo, nor am I concerned about gluten free, dairy free … and the list goes on …

What I usually look for is something that is not loaded with sugar or fat … and this one fits the bill!  It’s not particularly sweet but it is quite rich.  I didn’t make the paleo version the original recipe is but it still turned out great!

Chocolate Cake Recipe

What you need

1/2 cup coconut flour

1/4 cup almond flour

2 tsp baking powder

1/2 cup cocoa powder … *I use unsweetened cacao

400ml low fat milk

1/2 cup maple syrup … or honey

4 large eggs

2 tsp vanilla extract

 

What you do

Preheat oven to 175C.  Line 8 x 8 inch square baking tray with baking paper

SIFT coconut flour, almond flour, baking powder, and cocoa powder and mix until well combined.

Combine milk, honey, eggs and vanilla until thoroughly combined.

Add wet ingredients to dry ingredients slowly, mixing / whisking carefully until well combined and there are no dry bits.  Don’t over mix the mixture … it’s really runny so don’t panic.

Pour batter into baking tray.  Bake for 50 minutes.

Allow to cool in tray for at least 10 minutes before little mouths attempt to devour!
